Tomato sugo

I love a simple pasta with tomato. I used to have a cupboard full of tins of tomato, because I thought it was quicker and easier that using real tomatoes.  But just a little blender makes it super easy to make your own.

Simple tomato sugo

  1. Take your tomatoes and cut off the end where the stalk was. Cut a cross over the other end.
  2. Put them in a pot so they are just covered in boiling water and the skins will peel off no problem.
  3. Pour some of the water off and blend.

Basic: Add a tablespoon of white wine vinegar and a spoon of sugar**

**You can avoid refined sugar by substituting the sugar for dates. Just cover some dried dates with water and microwave for 45seconds to make a paste. 

Other things you can add:

  • Yoghurt to make it creamy
  • Garlic
  • Fresh basil leaves
  • Cubes of aubergine – steam in the tomato mix until they’re soft.
  • Olives and capers
