Fennel & Mushrooms

I have to say, despite loving all things green, fennel has never appealed to me, but yesterday I discovered a way to make it into something absolutely delicious!

  • Fennel bulbs, washed well and sliced thinly
  • Mushrooms, halved
  • Salt
  • Olive oil
  • Garlic

Steam the fennel slices until just tender.  Place in a pan with the olive oil, garlic, mushrooms and salt.  Fry until the mushrooms have just started to cook. Serve and eat immediately – unfortunately this is much nicer eaten straight away while it’s hot.
