Perfect Parfait

A fruity summery not-so-French breakfast *raw, vegan, gluten-free

So when I use the term parfait, I mean nice layers of things that roughly resemble layers of yoghurt, granola and fruit. I know the French might be insulted. Sorry Frenchies.

  • Chia
  • Buckwheat
  • Banana
  • Fresh seasonal fruit
  • Seeds
  • Sweetener (raw honey, agave) *optional

Prep: Soak chia and buckwheat overnight in separate bowls

Layer 1: The smooth stuff

Place soaked chia and a banana (or just half, depends on how much you like it) in a blender. You can add some vanilla too. It should become nice and smooth. Add sweetener if you want.

Layer 2: The crunchy stuff

Rinse the buckwheat well. Stir in sunflower seeds and any other seeds you fancy. Raw cacao nibs if you want something exciting!

Layer 3: The fruit stuff

In summer you can use strawberries, mango, apricot, litchi etc.

In spring there are berries!

In winter there are gooseberries, guavas and paw paw.

In autumn there are grapes, apples, figs.

Layer these into nice pretty layers in a glass. Probably best for a girly breakfast! 🙂
